A healthy Easter brunch

We all know that when it’s time for a family get together for the holidays, the food that fills the counter isn’t always the healthiest. Although, with my own mother as the host of this year’s Easter brunch, we had some great healthy options. I’ve said it once, and I’ll say it again, I am very thankful that my mom loves healthy food as much as I do. Of course we had the traditional baked ham, mashed potatoes, green beans and all of those fixings. Here are some of the recipes my mom followed when preparing our Easter brunch.

Healthy Roasted Whole Chicken

What’s Easter without a baked ham? Still Easter actually. Though baked ham is a traditional option for Easter, there are many healthier alternatives in which you can explore. One of these alternatives can be a baked whole chicken. Chicken is much healthier than ham, for reasons being that you can season it to your liking. Most ham comes pre-seasoned, and cured. Any meat that is cured has a very high amount of salt. Also, a lot of the seasoning options that are so yummy on chicken, are not very suitable with ham. So, be creative and incorporate some healthy low-fat protein baked chicken into your Easter brunch menu.

Shrimp Cocktail deviled eggs

You can’t have a traditional Easter brunch without some homemade deviled eggs. So, why not add some protein on top to double it up as two appetizers in one. This cute little appetizer adds a pop of color to your counter top, and will be loved by lovers of deviled eggs and the traditional shrimp cocktail.

You can’t consider it a brunch without some breakfast food as well. I’m not sure if quiche is a tradition in other family’s Easter holidays, but we always have a different quiche each year. This year it was my mom’s turn to provide the quiche, so being a lover of all things caprese, she prepared a Caprese inspired quiche. My mom has also recently been on a gluten free kick, but you wouldn’t be able to tell that this was gluten free. I highly recommend trying out this recipe if you’re a quiche fan.

After the main courses comes the dessert. Sure, everyone brings their own concoction of desserts on holidays, but my mom offered something light, fresh, and satisfying. This sugar free lemon pie is just what your sweet tooth needs after all of the previous servings. I can assure you that we have no left overs.
